If Japanese people were asked about their favorite summer soft drink, many would say “mugicha.” Mugicha is tea brewed with roasted un-hulled barley and contains no caffeine. It’s been popular in Japan for such a long time because it’s easy to make, but it’s also said to be quite healthy, containing many antioxidants. It’s simply un-hulled barley, roasted until caramel-hued and then steeped in hot water. That time over the heat gives it an almost carbonized tannic quality with a bit of caramelization. Mugicha is fragrant with a refreshing taste making it popular among children and adults alike!
