Global Evolution of Sushi
When a food is introduced to other countries it is often localized to suit local tastes and made more accessible to a broader audience. Well-known examples include pizza in the U.S. or curry in Japan.
Sushi has undergone a similar evolution. Sushi rolls are a great example of this localization. In Japan, when people refer to sushi, they typically mean nigiri. In the U.S., however, many people think of sushi rolls. Traditional Japanese sushi rolls feature the seaweed wrapped on the outside, whereas in the U.S., seaweed is wrapped on the inside. This creative evolution made sushi rolls more accessible to Americans who initially were not particularly fond of seaweed. That being said, the rise of nigiri in the U.S. is indisputable and at Shiro’s, we don’t see any signs of that slowing down.
