Kanpachi (amberjack) is a close member of the yellowtail family. It’s found in warmer waters making it a beautiful summer fish! Kanpachi is a premium fish because wild harvesting is limited, but recently, it’s being more widely farmed and has become a popular white fish for sashimi.

The first part of its name “kan” means “in between” in Japanese. The last part “pachi” means the number eight. The Kanji symbol for eight is “八.” Kanpachi got its name because the fish has the pattern like “八” between its eyes.
